BABOUCH : Bringing Forward the Essence of Morocco and its Flavours
BABOUCH sees chef Khalid Dahbi proudly return to his childhood food roots and with the desire to redeliver Moroccan cuisine to the British public. Aimed at the highly discerning London dining market, BABOUCH will present dishes that are colourful, full of flavour, sexy and great for sharing too.
Informally launched in collaboration with the BBC Arabic Festival in April this year, festival visitors were the first to sample Dahbi’s innovative approach to the exotic cuisine of his birthplace.
Within 45 minutes of opening, all of the healthy salads, the beef brochettes, the pulled preserved lemon chicken, and the Moroccan snails – from which BABOUCH draws its name – were quickly devoured.
BABOUCH aims to utilise core traditional Moroccan recipes with the ethnic dimensional spices, whilst using the best of seasonal British produce. It will also draw upon Dahbi’s recent travels to Marrakech and the seafood inspired by Morocco’s coastline, surrounded as it is by the Mediterranean and the Atlantic.
Dahbi: “In London, a city that boasts one of the finest and most competitive of platforms for international cuisine, what is on offer in relation to Moroccan food seems to me to be repetitive and boring, without a modern touch and lacking in imagination. Moroccan food is about going back to the heritage, creating a story and recreating dishes.”
BABOUCH is scheduled to have more pop-ups and other events in London before culminating in the opening of a restaurant towards the later part of 2017.
Stories from Morocco : Celebrating Gastronomy & Caftan Fashion

Taking place during London Fashion Week, the catwalk will showcase the stunning collections from contemporary designers - based in Morocco and in the Gulf - as they reinterpret and reimagine the traditional Caftan.
Headed by the British-Moroccan team – comprising of Jalila Elmastouki, Khalid Dahbi and Jamal Boujrad – they wish to bring forward their home country’s rich and diverse heritage to a London audience, aiming for the event to become a significant annual addition to the international fashion, culinary and cultural calendars.
